Sarawak Kacangma

Update on **18 February 2015**

I heard "kacangma" when I was in primary school. When Mama was in confinement period, the helper will serve this dish. It was very aromatic followed with bitterness. My sisters and I loved the taste of white wine and bitter when we were little. 

When we away from the home, surely missed Mama's kacangma. This time, Mama not going to spoil us , she insisted to let me learn how to cook her own style of kacangma.  

Ingredients:

1. sesame oil
2. pounded gingers 
3. chicken wings (feel free to use other parts of chicken)
4. pounded kacangma 

* Mama can't tell me the correct measurements, all depend on her "agak-agak" (means guess in Malay). Therefore, kindly enjoyed my Mama's kacangma cooking procedure.  
Dry fry the kacangma with low heat until slightly yellow
Pound kacangma finely
Heat up the pan with sesame oil
Add the pounded ginger and with low heat until fragrance 
Add chicken and stir fry until fragrant 
Add pounded kacangma 
Add water. Mama added plenty of water because we preferred soupy kacangma 
After the chicken wings softens, add white wine. I was told that not put too much white wine because it will cause bitter
Enjoy with white rice was super delicious

Vegetarian Mashed Potato Rolls

I came across this recipe from 生命電視台 that shared on Facebook and decided to try it in the first day CNY 2015 vegetarian dinner for Mama. 

Just sharing my cooking and learning process of mashed potato rolls.


Ingredients:

1. 1 bean curd skin
2. corn kernels
3. shredded Carrots
4. 3 potatoes
5. shredded black fungus
6. vegan oyster sauce
7. corn starch 

* No exact measurements from the Facebook, it just showed the steps in preparing the mashed potato rolls. 

 Bring the potatoes to boil by using low heat. I simmered the potatoes for half an hour until the potatoes were tender. 
 Mashed the potatoes until smooth 
Mix the corn kernels, shredded black fungus and carrots with mashed potatoes
 Add the vegan oyster sauce and salt and mix well together
 Place a medium size of bean curd sheet (after trimming and cutting) and put 1 tablespoon of filling in the middle of the bean curd skin, leaves wide gaps of each edges (especially for the learner like me)
 Rolled the skin
 Tucked in the sides as I wrapped by applying corn starch at the edge
 Until the filling was fully wrapped 
 Slide in potato rolls and deep fried until golden color
 Pardon me, my deep-fried skills is very poor 
Jeng, Jeng, Jeng

Papa almost finished whole plate of mashed potato rolls. I also received compliments from Mama and Naruto as well. I'm super proud of myself first attempt in making of this dish successfully. 

To the Goat Year: Third Day of CNY

Update on **21 February 2015**

I spent my third day of CNY in Sibu. We dropped into the Miao Li Lei Zhang Shi (妙理雷藏寺), located in the highways to Bintulu and Miri. I believed a stop in the shrine will bring the good luck year ahead.

To the Goat Year: Vegetarian Dinner

Update on **19 February 2015**

After visiting relatives in Roban, we rushed back to Saratok for preparing vegetarian dinner for Mama. She will switch to vegetarian diet during first and fifthteen according to lunar calendar. 

JoJo and me discussed the vegetarian menu few weeks before CNY. I bared in mind that all these vegetarian dishes not used any shallots, garlics, onions and gingers for fragrance purpose. Luckily, our cooking process on actual day went smoothly and had the dinner on 6pm successfully.

 Salted vegetables and tofu soup
 Mixed vegetables and mushrooms with vegetarian oyster sauce
  Vegetarian meat rolls. I learned this recipe from Buddhist Life Mission (生命电视台)that shared on Facebook
 Vegetarian curry
  JoJo's masterpiece, vegetarian fishes (比翼双飞) where she learned from Temple in Kota Kinabalu
Called it as "五福临门"

To the Goat Year: First Day of CNY


Update on **19 January 2015**

Happy Chinese New Year!!!!!!
Gong Xi Fa Chai!!!!!

Below was my quick update of the first day of CNY.


Visiting temple (广泽尊王)in Kampung Melayu, Roban. The redness in the temple brought the good luck for us.
Her outfit really matched the red tanglungs 
I was so happy !!!
Rosamond missed the old bridge near the temple. Hence, everyone followed her step in shooting at                                                                               there too.

Papa grow older and became skinny day by day after diagnosing diabetes few years ago.

Older Papa made me reminded 1 song: 父亲,(原唱:筷子兄弟)-I preferred Leo Ku (古巨基)that performed in the I'm Singer 3 (我是歌手3). Hopefully like this song, the times flied slowly to reduce my aging Papa. 

Part of the lyrics of the song goes like this:

I was under hot sun.
 Around 10.30am, we went our Uncle's house for visiting. We saw our uncle once a year. Hence, we treasured in learned how their lives now and reminiscing old times too. Also, we loved Uncle's ang pow. 
We went to our aunt's house too. Lack of learning their current lives because her 2 little naughty sons. 
We reunion in Malay restaurant Roban A.G.A.I.N. I should appreciate and grateful all the reunion chances because I never knew who will be missing the the next reunion.
The good moment that should treasure !!!
We treasured to have Malay Sarawak Laksa during CNY
